1. The Spanish omelette. No doubt the queen of tapas. It is usually ordered as an "omelette skewer" and comes with a piece of bread. The most traditional one is prepared with egg, potatoes and olive oil, but many also add onions.
2. Potatoes bravas and potatoes with aioli. These potatoes topped with a tasty brava and aioli sauce are a good accompaniment to a beer. The slightly spicy brava sauce contrasts with the aioli made from garlic and olive oil. An explosion for your palate.
3. Ham. And if it's Iberian better. It is one of the most loved Spanish products by those who visit the country. There are several kinds according to the care and feeding of the animal, but all are exquisite. In tapas it is usually accompanied by bread or picos and colines, a type of bread with a crisp texture.
4. Cheese. Spain has a strong cheese-making tradition. Many varieties are produced depending on each region. They usually serve local cheese with a little bread, or if you're lucky, with ham. The best-known cheeses are manchego, Idiazábal, Roncal, Mahón or Majorero.
5. Olives. The most popular ones are served pickled, but can also be filled with anchovy, pepper, chamomile or garlic. They are a very common dish served with other tapas.
6. Squid. Battered in olive oil and served hot. This dish is very popular throughout the country and is usually served in ring form.
7. Mussels. This mollusk is mainly steamed and can be served with lemon or accompanied by tomato, onion and pepper, chopped and seasoned. They can also be pickled, a canning technique.
8. Croquettes. Essential in Spanish cuisine. It is a batter with breadcrumbs, traditionally they were filled with the leftovers of the day, such as stew. Today they are usually filled with ham, cod, mushrooms, and newer ones such as centollo, squid or different cheese.
9. Broken eggs. Also known as "starry eggs". It consists of a dish made with a base of chips, on which is placed a bed of ham. On top is the "star" a fried egg with the over-easy yolk, so that it covers the rest of the dish. It is usually accompanied with bread. There are versions in which they replace ham with gulas, ranges or sausages.
10. Salad. A cold dish that is prepared with cooked potatoes, beans, tuna, egg and various very chopped vegetables and legumes, such as carrots, peas or beans.
